The Art of Traditional Moroccan Mint Tea

Moroccan mint tea, known locally as Atay, is much more than just a drink—it is a symbol of hospitality, friendship, and tradition.

Ingredients

  • 1 tablespoon Chinese gunpowder green tea pearls
  • A large handful of fresh spearmint leaves (washed thoroughly)
  • 3 to 4 sugar cubes (adjust to taste)
  • 500ml boiling water

Instructions

  1. Rinse the tea: Add the green tea pearls to your traditional teapot, pour a small splash of boiling water, swirl it for 5 seconds, and discard the water to remove bitterness.
  2. Infuse: Add the fresh mint and sugar cubes into the teapot. Fill it to the top with boiling water.
  3. Blend the flavors: Place the teapot on low heat for about a minute, or let it steep for 3 to 5 minutes.
  4. Pour from high above: Pour the tea into small glasses from a height to aerate it and create a light, desirable foam on top.
